Our Durum Wheat Semolina is obtained by re-milling organic durum wheat grown on the hills of Ragusa, in the clay-limestone soils typical of the Iblean lands. The double milling gives it a fine, silky granulometry, ideal for smooth, well-structured doughs. Its aroma is the unmistakable scent of freshly milled Sicilian wheat, with hints of golden straw and a full-bodied flavour that elevates every preparation. Perfect for homemade fresh pasta, sesame-topped semolina bread and golden focaccia. Unlike commercial semolinas, ours retains a natural amber colour and protein richness that ensures excellent cooking performance.

Be inspired by Sicilian tradition

Homemade Fresh Pasta
Shape the semolina into a well, add eggs and a pinch of salt. Knead until smooth and elastic, rest the dough, then roll out thin sheets. Cut into your preferred shape and cook in plenty of salted boiling water for just a few minutes.

Sicilian Semolina Bread
Dissolve sourdough starter in warm water and add the semolina with a drizzle of extra virgin olive oil. Knead vigorously and let rise for several hours. Shape into loaves, sprinkle with sesame seeds and bake in a hot oven for a golden, wonderfully fragrant bread.
