Grillo
Our Grillo DOC Sicilia comes from organically farmed grapes in the estate's vineyards, where the limestone soil and proximity to the sea give the variety a distinctive minerality. Manual harvesting in the coolest morning hours, gentle pressing and temperature-controlled fermentation preserve the aromatic integrity. The result is a luminous straw-yellow white with green reflections, offering fresh citrus notes on the nose — lemon, pink grapefruit — orange blossom and a background of aromatic herbs. On the palate it is fresh and lively, with a savouriness reminiscent of the sea and a long, mineral finish. The perfect companion for raw fish, fried seafood, pasta with sardines and all Mediterranean summer cuisine.
