Nero D'Avola
Our Nero D'Avola DOC Sicilia comes from organically farmed grapes in the estate's vineyards, on the hills of Ragusa where the sea breeze and generous sun give the grapes a slow, complete ripening. After manual harvesting and extended skin maceration, the wine ages in stainless steel to preserve the fruit's freshness. The result is a full-bodied, structured red with a deep ruby colour, intense notes of ripe cherry, plum, sweet spices and a touch of liquorice. The tannins are velvety and the finish long and warm. It pairs magnificently with grilled red meats, wild boar ragù, aged cheeses such as Ragusano DOP and the robust dishes of Sicilian tradition.

Beef cheek slow-cooked in our Nero D'Avola with Giarratana onion, carrots, celery and a sprig of rosemary. After three hours of gentle cooking, the meat falls apart and the wine becomes a rich, glossy sauce — perfect with semolina polenta or broad bean purée.
