Wild Fennel Pestato
Our wild fennel pestato is made from the wild fennel that grows spontaneously on the hills of Ragusa, strictly hand-picked in the Iblean lands of our organic estate. Artisan processing with our extra virgin olive oil preserves the fresh, anise-like notes of this quintessentially Sicilian aromatic herb. The flavour profile is lively and balsamic, with a pleasant herbaceous persistence reminiscent of the Mediterranean maquis. Perfect for the classic pasta with sardines, but also for enhancing fish salads, grilled vegetables and creative crostini. Unlike industrial products, our wild fennel is harvested at the optimal balsamic period, ensuring an intense and natural aroma that no artificial extract can match.

Pasta with sardines and wild fennel pestato
Cook bucatini and toss with fresh sardines pan-fried, toasted pine nuts, soaked raisins and two generous spoonfuls of our wild fennel pestato. An iconic dish of Sicilian tradition, made even more intense by the wild fennel from the Iblean lands harvested on our estate.

Wild fennel crostini with tuna and capers
Spread the wild fennel pestato on toasted bread crostini, top with flakes of Sicilian red tuna and finish with our rinsed salt-cured capers. The anise freshness of the wild fennel enhances the savouriness of the tuna and Iblean capers.
