Our Verdese olive pestato is crafted from the indigenous cultivar grown organically on the hills of Ragusa, between the countryside and the sea of the Iblean lands. The olives are harvested at the optimal moment and processed by hand with our extra virgin olive oil, garlic and a delicate bouquet of Mediterranean aromatic herbs. The result is a bright green spread with a soft, subtly herbaceous flavour profile, free from excessive bitterness. Perfect for enriching crostini, dressing fresh pasta or pairing with aged Sicilian cheeses. Unlike industrial spreads, our cold processing and single Verdese cultivar ensure an authentic taste and velvety texture impossible to replicate.

Crostini with Verdese pestato and ricotta
Spread the Verdese olive pestato on slices of toasted rustic bread and add a spoonful of fresh Iblean ricotta with a grind of black pepper. An appetiser that highlights the delicacy of the Verdese cultivar, balanced by the creaminess of the ricotta.

Spaghetti with Verdese pestato
Cook the spaghetti al dente, toss with two generous spoonfuls of Verdese pestato loosened with a ladle of pasta water and a drizzle of our extra virgin olive oil. Top with grated Ragusano pecorino and fresh basil leaves for a simple and fragrant primo.
