Our cherry tomato sauce is made from cherry tomatoes organically grown on our land on the hills of Ragusa, hand-picked at perfect summer ripeness when the Iblean sun has concentrated their sugars and aromas. Artisan processing involves a gentle straining and rapid bottling that preserves the vivid red colour, sweet flavour and velvety consistency of Sicilian cherry tomatoes. On the palate, a natural sweetness free from aggressive acidity, with a fruity and subtly herbaceous aftertaste. Perfect as a base for quick sauces, pasta al pomodoro, homemade pizza and aubergine parmigiana. Unlike industrial passata, our cherry tomato sauce contains no added sugars or preservatives, letting only the Iblean terroir speak.

Be inspired by Sicilian tradition

Pasta al pomodoro with cherry tomato sauce
Heat our cherry tomato sauce in a pan with a clove of garlic, a drizzle of our extra virgin olive oil and fresh basil leaves. Toss with al dente spaghetti or penne and finish with grated Iblean ricotta salata. The natural sweetness of Sicilian cherry tomatoes makes any acidity corrector unnecessary, for a truly authentic sauce.

Aubergine parmigiana with cherry tomato sauce
Prepare the classic Sicilian parmigiana by frying the aubergines and layering them with our cherry tomato sauce, slices of Ragusano provola and fresh basil. Bake until golden and serve warm. The velvety sweetness of our cherry tomato passata envelops the aubergines without masking their flavour, for a parmigiana like those of Iblean grandmothers.
