Datterino Tomato Sauce
Our datterino sauce is produced from datterino tomatoes organically grown on our estate on the hills of Ragusa, in the heart of the Iblean lands where the mild climate between countryside and sea enhances their sweetness. This variety, with its characteristic elongated shape, develops a particularly dense and concentrated pulp with a higher sugar content than other tomato varieties. Low-temperature artisan processing preserves the deep red colour, enveloping aroma and nutritional properties of the freshly picked fruit. Ideal as a base for gourmet pizza, fish soups, quick sauces and bruschetta, where its dense consistency adheres perfectly without releasing water. Unlike common passata, our datterino sauce offers a full, rounded flavour that needs no lengthy cooking to express its best.

Pizza with datterino sauce and basil
Spread our datterino sauce on pizza dough, add fresh fior di latte and bake at high temperature. Finish with fresh basil leaves and a drizzle of our extra virgin olive oil after baking. The concentrated pulp of the datterino creates a dense and aromatic base that does not release water, for a pizza with an intense and authentic flavour.

Fish soup with datterino sauce
Sauté garlic and chilli in our extra virgin olive oil, add the datterino sauce and let it simmer. Add mixed fresh fish — scorpionfish, prawns and mussels — and cook gently, covered. The concentrated aromaticity of the datterino envelops the fish without overpowering it, creating a rich broth that smells of Sicily and the sea.
