Our Carob Balsamic is an artisan condiment obtained by slowly cooking and reducing carob juice extracted from the pods of centuries-old trees on our estate on the hills of Ragusa. Iblean carob, ripened under the sun of the Iblean lands, gives the condiment an inimitable sweet-sour balance with deep notes of caramel, date, dried fig and a hint of liquorice. The consistency is dense and silky, perfect for drizzling over salads, aged cheeses, artisan gelato and fish carpaccios. Unlike conventional balsamic condiments made from grape must, ours uses exclusively carob, offering a one-of-a-kind aromatic profile and an original alternative for creative cuisine.
