Our Modica Chocolate with Carob is cold-processed following the ancient Aztec tradition that makes Modica unique in the world of chocolate, bearing the IGP certification as a guarantee of authenticity. We enrich it with carob flour from centuries-old trees on our estate on the hills of Ragusa, in the Iblean lands. Low-temperature processing preserves the characteristic sugar granularity and unleashes a mosaic of flavours: intense cocoa merges with the sweet, toasted and lightly caramelised notes of carob. It melts slowly on the palate revealing a rare complexity, perfect enjoyed on its own, paired with aged cheeses or crumbled over artisan gelato.
