Our Busiata is a uniquely Sicilian pasta shape, artisan-crafted with semolina from organic ancient grains grown on the hills of Ragusa. The name comes from the buso, the thin iron rod around which the dough is hand-wrapped to create the characteristic helical spiral. Bronze drawing further enhances the surface porosity, making it perfect for capturing pestos, fish sauces and rich condiments. After slow, gentle drying it retains a full wheat flavour with hints of Mediterranean scrubland. This shape embodies centuries of Sicilian culinary wisdom and delivers an authentic taste experience impossible to replicate through industrial production.
