Our artisan Fusilli are made with semolina from ancient Sicilian grains organically grown on the hills of Ragusa, in the heart of the Iblean lands. Bronze drawing gives the spiral a porous, rough surface that magnificently captures sauces, ragù and vegetable dressings. Slow drying at low temperature preserves the natural golden colour and the nutritional properties of the grain. On the palate they offer a firm consistency with an intense, lingering wheat flavour and delicate notes of earth and sunshine. Perfect with the classic Sicilian Norma, meat ragù or simply with extra virgin olive oil and seasonal vegetables.

Fusilli with Sicilian Ragù

Prepare a ragù with pork and beef, onion, carrot, celery and tomato passata, simmering slowly for at least two hours. Toss the al dente fusilli and finish with grated Sicilian pecorino. The fusilli spirals capture every drop of sauce.
