Spaghetti
Our Spaghetti are made from semolina of ancient Sicilian grains organically grown on the hills of Ragusa, in the fertile Iblean lands. Bronze drawing gives the surface that artisanal roughness which catches and holds every condiment, while slow drying at low temperature for over 24 hours preserves the intense grain aroma and protein structure. They hold their shape excellently during cooking and release a fragrance of freshly harvested wheat with a full, enveloping flavour. Ideal with fish sauces, extra virgin olive oil dressings or traditional Sicilian ragù. Compared to industrial pasta, our artisan process and organic raw materials deliver an incomparable taste experience.

Spaghetti with Sardines
Sauté onion, wild fennel, pine nuts, raisins and fresh sardine fillets in extra virgin olive oil. Toss the al dente spaghetti with the sauce and finish with a dusting of toasted breadcrumbs. A great Sicilian classic reimagined with our ancient grain pasta.

Spaghetti with Garlic, Oil and Chilli
Heat Tenuta Chiaramonte extra virgin olive oil with sliced garlic and Iblean chilli. Toss the spaghetti in the flavoured oil and serve with a sprig of fresh parsley. Absolute simplicity that showcases the quality of bronze-drawn pasta.
