Il Galante is our DOP Monti Iblei Valle Irminio extra virgin olive oil, produced from Moresca olives cultivated on the gentle plain sloping toward the Irminio river. Cold-pressed within hours of harvest, it reveals a medium fruity oil with sweet notes of freshly cut grass, ripe almond and a hint of mature tomato. Bitterness and pepperiness are delicate and well balanced, making it extraordinarily versatile: it excels raw on fish and vegetables as well as in cooking, where it holds its structure without overpowering other ingredients. DOP and organic certified, it is the ideal oil for those seeking elegance and harmony in every dish.

Swordfish alla ghiotta
Pan-seared swordfish steaks with Pachino cherry tomatoes, capers, olives and a drizzle of Il Galante off the heat. The Moresca's medium fruitiness doesn't overwhelm the fish but enhances its delicacy, binding all ingredients in an iconic dish of the Ragusa coast.
