Il Primizio
Il Primizio comes from the Verdese cultivar, a rare indigenous olive that thrives in our Iblean lands. Early harvesting — hence the name 'Primizio' — yields an IGP Sicilia oil with a light, elegant fruitiness, delicate herbaceous notes of freshly cut grass, raw artichoke and green almond. The pepperiness is barely a whisper, making it perfect for preparations where the oil should accompany without dominating: raw fish carpaccio, seasonal salads, cold summer soups and fresh cheeses. Verdese is a rare cultivar, and this oil represents a unique expression of Sicily's olive-growing heritage. IGP and organic certified.

Orange and fennel salad
