Carob Oil
A product unique in the Italian oil landscape, born from the meeting of our organic Tonda Iblea extra virgin oil and carob extract drawn from the centuries-old trees on our estate on the hills of Ragusa. Carob, a symbol of the Iblean countryside, lends the oil sweet, toasted notes reminiscent of cocoa and dried fruit, without ever overpowering the extra virgin's fruitiness. On the palate it is velvety and enveloping, with a warm, slightly spiced aftertaste that invites a second taste. It pairs surprisingly well with aged cheeses, artisanal gelato, fruit tarts and pumpkin dishes. A product of excellence that tells the story of the biodiversity of the Iblean lands, with no equivalent on the market.

Ragusan cheese board with carob oil
Compose a board with aged Ragusano DOP, Iblean provola and ricotta salata, then drizzle each cheese with our carob oil. The toasted, sweet carob notes create a surprising contrast with the savoury depth of the aged cheeses, turning a simple board into a tasting experience.

Vanilla gelato with carob oil and salt
Serve two scoops of artisanal vanilla gelato and pour a spoonful of our carob oil, finishing with a pinch of Trapani salt and crushed toasted almonds. The carob in the oil recalls chocolate without being chocolate, creating an elegant dessert that celebrates the ingredients of the Iblean lands.
