Rosemary Oil
Wild rosemary growing naturally on our estate on the hills of Ragusa is hand-picked and cold-infused into our organic Tonda Iblea extra virgin oil, preserving its aromatic properties intact. The result is an oil with an intense herbaceous, balsamic fragrance and resinous undertones of Mediterranean scrubland that evoke the Iblean landscape. On the palate it is enveloping, with a pleasant bitter note and a slightly peppery finish. It lends itself beautifully to roast meats, baked potatoes, focaccia and legume soups. Unlike industrial flavoured oils, here the rosemary converses with an extra virgin of the highest quality, creating a product that elevates any dish.

Lamb cutlets with rosemary oil
Grill Iblean pasture lamb cutlets over live embers until golden, then dress raw with coarse salt and our rosemary oil. The herbaceous, balsamic notes of the oil penetrate the warm meat, enhancing the lamb's succulence with an aromatic touch reminiscent of Mediterranean scrubland.

Focaccia with rosemary oil and Trapani salt
Stretch a simple dough of flour, water and sourdough starter, dimple with your fingers and pour generous rosemary oil over the surface. Scatter with Trapani salt and bake at 220 °C until golden. The rosemary infused in the oil releases its aroma during baking, yielding a fragrant, crispy focaccia.
