Lemon Oil
Our lemon oil comes from cold-pressed organic Tonda Iblea olives grown on the hills of Ragusa, enriched with the natural essence of lemons from the Iblean lands harvested at full ripeness. The low-temperature infusion process captures the lemon's vibrancy without overpowering the oil's medium fruitiness, delivering a rare aromatic balance. On the nose it opens with fresh, zesty lemon peel notes, followed by a soft, slightly herbaceous body. Perfect drizzled raw on steamed fish, raw seafood, citrus salads or simply on a slice of warm bread. A craft product impossible to replicate with artificial flavourings, born of the unique microclimate between countryside and sea.

Fennel and orange salad with lemon oil
Thinly slice fresh fennel and blood oranges, arrange on a plate and dress with sea salt, black pepper and a generous drizzle of our lemon oil. The citrus freshness of the oil amplifies the character of the ingredients, delivering a quintessentially Sicilian winter salad.

Sea bass en papillote with lemon oil
Wrap a fresh sea bass in parchment paper with Pantelleria capers, olives and cherry tomatoes, then bake at 200 °C for 20 minutes. As soon as you open the parcel, drizzle our lemon oil raw: the heat releases an intense citrus aroma that transforms a simple fish into a signature dish.
