Tonda Iblea Brine Olives

Tonda Iblea is the flagship cultivar of the hills of Ragusa, and on our estate it grows in organic groves exposed to the sea breeze that tempers its character. Hand-harvested at full ripeness, it is preserved in natural brine with only water and Sicilian sea salt, free of additives or preservatives. The result is an olive with generous, compact flesh, a rich, bold flavour showing fruity nuances and a slightly bitter aftertaste typical of the variety. Perfect as a distinguished appetizer, in caponata, focaccia or alongside aged cheeses such as Ragusano DOP. The superior quality of Tonda Iblea over conventional table olives is evident from the very first taste, thanks to its unique structure and aromatic complexity.

Prepare a caponata with fried aubergine, celery, tomato and our Tonda Iblea brine olives sliced into rounds. The Tonda Iblea's meaty flesh holds up to cooking and adds a savoury depth that ordinary olives cannot match. Serve warm with a drizzle of our organic extra virgin oil and fresh basil leaves.

Stretch the focaccia dough, scatter our Tonda Iblea brine olives lightly crushed and halved cherry tomatoes over the surface. Drizzle with our extra virgin oil and bake at 220 °C. The Tonda Iblea releases its rich flavour into the dough during baking, creating a focaccia with an intense taste and a golden, fragrant crust.
